Banana Bread

This simple, moist banana bread can also be baked in 1 (9x5x3) loaf pans.
For best flavor, use very ripe bananas, or bake bananas in oven and cool before using.

1 3/4 cup flour
1 1/2 tsp. baking soda
1/2 tsp. salt
3 large eggs
1 cup mashed ripe bananas (about 3)
1 cup sugar
1/2 cup vegetable oil

Preheat to 350.
Coat 3 (5x3) pans with non-stick spray. Whisk flour, soda, salt in medium bowl.  Whisk eggs, sugar, bananas, and oil in large bowl until smooth.  Add dry ingredients to banana mixture and stir just until combined.  Scrape evenly into prepared pans and bake until a toothpick comes out clean, about 40-50 minutes.  Transfer to a wire rack, let bread cool in pan for 15 minutes.  Run a knife around inside of pan to release the bread and turn out onto a rack.  Let cool completely.
