Blender Pesto

2 cups fresh basil leaves
1/2 cup olive oil
2 Tbl pine nuts
3 Tbl softened butter
1 tsp salt
2 cloves garlic
Put all into food processor and mix at high speed, stopping often to scrape sides.

When evenly blended, pour into a bowl and beat in by hand (don't use processor for this):
2 Tbl freshly grated romano pecorino cheese
1/2 cup freshly grated parmesan cheese

When the cheese is evenly stirred in, stir in:
3 Tbl softened butter

To store, I freeze this in ice cube trays, then pop out cubes and keep frozen in plastic freezer bag.
