Oven-Baked Brown Rice

1  1/2 c. brown rice
2  1/3c. water
2  tsp. butter or vegetable oil
Adjust oven rack to middle of oven.
Preheat oven to 375.

Spread rice in 8" glass square dish.
Bring water and butter or oil to a boil and pour over rice.
Cover tightly with double layer of foil.
Bake 1 hour until tender.

Remove from oven and uncover.
Fluff with fork.  Cover for 5 minutes.
Fluff again and let sit, uncovered, 5 minutes more.
