Mario Batali's Essential Tomato Sauce

Good all-purpose tomato sauce, great for pasta dishes.

1/4 olive oil
1 large onion, finely chopped
4 garlic cloves, thinly sliced
1/4 cup finely shredded carrot
1 Tbl finely chopped thyme
2  28-oz cans whole peeled tomatoes with their juices, crushed
kosher salt

In a saucepan, heat the oil until simmering.  Add the onion and garlic and cook over moderate heat, stirring until softened and just starting to carmelize, about10 minutes.  Add carrots and thyme and cook, stirring often, until softened, about 5 minutes.  Add tomatoes and their juices.  Bring to a boil.  Turn down and simmer until thickened and reduced to 5 cups, 30 minutes.  Season with salt.
Refrigerate up to 1 week.
Freezes well.
